Apple Cinnamon Pancakes

I was making pancakes the other morning for breakfast and decided to add a small twist. Caramelize some apple in a pan and pour the mix on top of them. So here’s the pancake mix recipe and instructions as follows:

  • 3 cups all-purpose flour
  • 7 teaspoons baking powder
  • 2 teaspoon salt
  • 1 tablespoon cinnamon
  • 2 teaspoon ground nutmeg
  • 2 tablespoon white sugar
  • 2 1/2 cups milk
  • 2 egg
  • 6 tablespoons butter, melted
  • 1 sliced red apple
  • 1/2 cup brown sugar (for apple’s in pan)

This makes a lot of batter! Use a large bowl. If needed ingredients can be halved.

In a bowl, mix all dry ingredients together. Make a well and mix the butter and milk together until batter is smooth. Slice apples into slivers. In a pan, melt some butter and 3 pinches brown sugar. Over Medium heat cook apples until brown on one side. Designs are fun here. Flip and then pour pancake mix over them. Cook until air bubbles pop in the surface of the pancakes. These can be damn hard to flip, so The longer the spatula the better. Flip and let cook about another 2 mins. Serve hot!

You wont use the entire apple, so the extra can be diced and placed in the pan with the rest of the brown sugar and some maple syrup. This makes a nice glaze.
